Ingredients
- 12 Eggs
- 1/2 cup Cherry Tomatoes sliced
- 1/2 cup Colored Bell Chopped
- 3 cups Baby Spinach or Power Greens
- 6 slices Cooked Uncured Bacon or sausage, deli meat, salmon, etc
- Cheese of Choice optional
- 1/2 tsp Salt
- 1/2 tsp Peper

Instructions
- Preheat oven to 350F
- Grab a muffin pan and oil each cup with butter, olive oil, or coconut oil
- Add eggs to a bowl and whisk
- Add all ingredients *except the spinach and cheese* and mix together
- Add a handful of spinach to the bottom of each cup
- Pour in egg mixture until about 3/4 full per each cup
- Top with cheese
- Bake for 3-35 mins or until slightly browned and eggs are set
Recipe Notes
The muffins can be frozen if you are making a large batch, microwave to reheat.
Get creative with your ingredients! You can add leftover veggies like roasted broccoli or brussels sprouts. Add in fresh herbs, onions, potatoes, etc.
