These are great for on the go breakfast or as a snack!
Grab a muffin pan and oil each cup with butter, olive oil, or coconut oil
Add eggs to a bowl and whisk
Add all ingredients *except the spinach and cheese* and mix together
Add a handful of spinach to the bottom of each cup
Pour in egg mixture until about 3/4 full per each cup
Bake for 3-35 mins or until slightly browned and eggs are set
The muffins can be frozen if you are making a large batch, microwave to reheat.
Get creative with your ingredients! You can add leftover veggies like roasted broccoli or brussels sprouts. Add in fresh herbs, onions, potatoes, etc.
