Instructions
  1. Preheat oven to 350F
  2. Grab a muffin pan and oil each cup with butter, olive oil, or coconut oil
  3. Add eggs to a bowl and whisk
  4. Add all ingredients *except the spinach and cheese* and mix together
  5. Add a handful of spinach to the bottom of each cup
  6. Pour in egg mixture until about 3/4 full per each cup
  7. Top with cheese
  8. Bake for 3-35 mins or until slightly browned and eggs are set
Recipe Notes

The muffins can be frozen if you are making a large batch, microwave to reheat.

Get creative with your ingredients! You can add leftover veggies like roasted broccoli or brussels sprouts.  Add in fresh herbs, onions, potatoes, etc.
